Delivering a State-Approved Modular Kitchen with a Fast Turnaround

Mercer University, a private research university in Macon, Georgia, is the oldest private university in the state and enrolls more than 9,000 students. During an 18-month renovation, the university needed a temporary kitchen solution to support consistent student meal service throughout the project.

To meet this need, Kitchens To Go by Mobile Modular provided a three-module modular kitchen with dedicated cook, prep, and wash areas, along with connected cooler, freezer, dry storage, and restroom modules. The Georgia state-approved kitchen provided 2,016 square feet of open working space with humidity and climate control. The integrated storage and restroom modules helped reduce delays during daily operations and supported an efficient foodservice workflow.

Speed was an important part of the project. The agreement was signed in March 2026, and the modular kitchen was delivered in June 2026, approximately three months later. Kitchens To Go was able to provide the state-approved solution within the project timeline, giving Mercer University a practical way to maintain foodservice operations during the renovation.

Close coordination also supported a smooth implementation. Kitchens To Go and Mercer University teams met regularly before delivery, with strong communication and responsiveness throughout the planning process. That collaboration helped keep project needs aligned as the temporary kitchen moved from agreement to delivery.

Once in place, the modular kitchen provided a solution that fit well on campus and supported consistent meals. The kitchen is planned to remain on site for 18 months, providing continuity throughout the renovation period.

This project highlights Kitchens To Go’s ability to deliver flexible, state-approved modular kitchen solutions for higher education environments where speed, coordination, and continuity of foodservice are critical.
